Vegan Curried Cauliflower Soup

Main Ingredients

Garlic

Cauliflower

White Onion

Carrots

Paprika

Yukon Potatoes

Curry Powder

Veg Broth

Green Lentils

Coconut Milk

Lemon Juice

Maple Syrup

Instructions

Saute the onion & garlic in the instant pot. Add chopped carrots, cauliflower & potatoes.

Add The Broth

Add vegetable broth, uncooked lentils, curry powder, paprika, and some salt. Combine and set the instant pot to pressure cook on HI for 6 minutes.

Hand blend the soup then add coconut milk, salt & pepper, lemon juice & maple syrup. Then cook for another few minutes.

Serve hot with a side of crackers, garlic bread, or toast!
