Banh Cuon Flat Rice Noodles
White onion
White button mushrooms
Asparagus
Broccoli
Hoisin sauce
Soy sauce
Water
Chili sauce

Cook the noodles according to package. Drain & toss with vegetable oil. Set aside. Chop & trim the asparagus & broccoli.
In a skillet or work fry garlic then add onions, mushrooms, asparagus and broccoli. Sauté until all veg is cooked and tender.
Whisk the sauce ingredients together. Add more chili sauce if you prefer more spice. Add the rice noodles to the veg skillet and slowly add the sauce.
Turn off the heat and add some freshly chopped basil. Mix once more and serve hot!
Gluten Free: For a gluten-free Hoisin Sauce, I recommend the one by Sun-Luck. For soy, I recommend San-J Tamari gluten-free soy sauce.
Noodles: Any other shaped rice noodles also work with this recipe.
