Vegan Cauliflower Tikka Masala
Main Ingredients
Cauliflower
White Onion
Ginger
Garlic
Vine-ripe Tomatoes
Red Bell Pepper
Full Fat Coconut Milk
Spices: Garam Masala Coriander Turmeric Cinnamon
Sauce
Add mustard seeds to a pan, then add ginger, garlic, green jalapenos (if using) and chopped onions. Cook until fragrant.
While that is cooking add sauce ingredients into a blender. Then add the pan contents into the blender too & blend until smooth.
Spice
Pour blender contents back into the pan and add all the spices. Gently simmer then cook uncovered for 10-15 minutes.
Add cauliflower florets, cook (covered) for 10 minutes, then uncovered for 10-15 minutes.
Serve
To serve, drizzle with cashew cream and garnish with chopped cilantro. Enjoy hot with rice, Naan or tortilla.
