Main Ingredients
Diced Eggplant
Penne Pasta
Large White Onion
Cooking Wine
Vegan Parmesan Cheese

Roast The Eggplant
Toss the eggplant in olive oil then bake for 25 minutes.
Heat oil in a nonstick pan then add sliced onions with a pinch of salt. Saute until slightly brown (~25 minutes) then add a splash of cooking wine to the pan.
Caramelize The Onions
Fry garlic, red crushed peppers, in a pan with oil. Add diced tomatoes and simmer uncovered for 15-20 minutes before adding basil, salt & pepper.
Make The Sauce
Cook the pasta al dente then toss in everything to combine. Serve with parmesan & basil.
