Pasta Primavera With Sauteed Vegetables

Main Ingredients

Penne Pasta

Vegan Butter

Balsamic Vinegar

Fresh Basil

Pine Nuts

Salt & Pepper

 Tomatoes

Garlic

Small Onion

Yellow Squash

Asparagus

Broccoli

Bell Peppers

Lemon Juice

The Pasta

Cook the pasta al dente then drain. Rinse with cold water & toss with olive oil.

The Veg

Add the chopped vegetables to garlic & vegan butter. Pan grill over medium-high heat.

Add the cooked pasta to the veggies. Add balsamic vinegar, lemon juice & basil then season to taste.

Serve

Toss with vegan parmesan & some pine nuts to serve. Add a side of garlic bread if desired.
