Pulled Shiitake Mushroom BBQ Sandwich

Main Ingredients

Big Mama's Homemade BBQ Sauce

shiitake mushrooms

white or yellow onion

baby portobello mushrooms

4 hamburger buns

Salt & Pepper

Olive Oil

Toppings: Arugula, tomato, dill pickles

Slice 

Make the BBQ sauce (if you don't have some on hand) & thinly slice the mushrooms.

Caramelize

Heat a large skillet with oil & cook the onions & mushrooms for 5-7 minutes. Turn up the heat to caramelize the onions & once done add the BBQ sauce. Bring to boil & simmer for 15 minutes.

Serve the mushrooms on the buns and top with the arugula, tomato and sliced pickles.

Depending on the size of your pan, you may need to cook the mushrooms in two batches.
