You didn’t think I’d let summer pass without a new popsicle recipe, did you??
Well here it is. The kids new obsession this summer, my Vegan Mango Lassi Popsicles!
This recipe was inspired by my 7 year old, believe it or not. He’s been going on and on about wanting to make a vegan version of the ever so popular Indian drink, Mango Lassi, at home. Mango Lassi is a traditional yogurt-based drink from India. It’s typically a blend of yogurt, water, spices, mango, and sugar. Some people even use milk or condensed milk in place of the water and/or yogurt to make it even creamier.
Since our house is continuously stalked with cases of mangoes over the summer, I knew I had to make a vegan mango lassi to fulfill my son’s mango lassi addiction. He’s not a huge fan of spices like cardamom, so I kept it really simple. While I was experimenting in the kitchen, one thing led to another and I was left with this thick and creamy, delicious mango mixture in the blender.
It was a little too thick as a drink, so instead of trying to thin it out and dilute the delicious flavor, I turned them into these Vegan Mango Lassi Popsicles!
The only problem I had was having to tell my son he’d have to wait until the next day for the mango popsicles to set (ha!). Lucky for me, he was happy to lick the blender container clean using a spoon and knowing he’d have mango lassi popsicles for several days.

Vegan Mango Lassi Popsicles
INGREDIENTS
- 2 cups mango (ripe) , diced
- 1 cup lite coconut milk
- 3 medjool dates , pitted
- 10 raw cashews , soaked for 2-3 hours if not using a powerful blender
- 1/4 teasp vanilla extract
INSTRUCTIONS
- Combine all ingredients above into a blender,
- Blend until completely pureed into a smooth and creamy mixture.
- Pour the mango lassi into popsicle molds.
- Place in freezer and enjoy once frozen!

Thank you! I’m honestly not sure how they’d be with watermelon, but you should totally try it out, may just need to adjust the amount of dates. It won’t be as creamy since pureed mango is thick and creamy on it’s own whereas watermelon is more water based, but I still think it’d taste good! Let me know if you try it!
