Well here it is. The kids new obsession this summer, my Vegan Mango Lassi Popsicles!
This recipe was inspired by my 7 year old, believe it or not. He’s been going on and on about wanting to make a vegan version of the ever so popular Indian drink, Mango Lassi, at home. Mango Lassi is a traditional yogurt-based drink from India. It’s typically a blend of yogurt, water, spices, mango, and sugar. Some people even use milk or condensed milk in place of the water and/or yogurt to make it even creamier.
Since our house is continuously stalked with cases of mangoes over the summer, I knew I had to make a vegan mango lassi to fulfill my son’s mango lassi addiction. He’s not a huge fan of spices like cardamom, so I knew I was going to keep it really simple. I honestly had no intention of developing a vegan mango lassi recipe to share with all of you, but while I was experimenting in the kitchen, one thing led to another and I was left with this thick and creamy, delicious mango mixture in the blender. It was a little too thick, so instead of trying to thin it out and dilute the delicious flavor, I decided to turn them into Vegan Mango Lassi Popsicles!
The only problem I had was having to tell my son he’d have to wait until the next day for the mango popsicles to set (ha!). Lucky for me, he was happy to lick the blender container clean using a spoon. Not to mention I told him he’d have mango lassi popsicles for several days, so he was happy.
These mango popsicles are creamy, made with whole ingredients, gluten-free, free of refined sugar, and delicious! Instead of being icy (which is typically what you get when making fruit popsicles), these are super thick and creamy like my chocolate fudge popsicles. They are perfect way to cool down over the summer and make a perfect healthy and fulfilling snack, especially after a swim in the pool or at the beach! You can even enjoy them for breakfast.

Take a popular Indian mango drink and turn it into vegan popsicles! These Mango Lassi popsicles are only 5 ingredients, healthy, creamy, and delicious!
Combine all ingredients above into a blender,
Blend until completely pureed into a smooth and creamy mixture.
Pour the mango lassi into popsicle molds.
Place in freezer and enjoy once frozen!
You can just as easily substitute the mango for any other ripe in season fruit. Depending on how sweet the fruit is, you may need to adjust the amount of dates.
