I’ve been in the kitchen cooking all things pumpkin the past few weeks! On the weekends, we’ve been indulging in pumpkin waffles and muffins. My pantry is already stocked with cans of pumpkins.
The one thing I used to hate is leftover pumpkin puree after making a recipe that you hope to use soon, but usually gets tossed out after sitting in the fridge for days.

Using Up Leftover Pumpkin Puree
I developed a recipe for an easy 15-minute vegan pumpkin butter recipe last year. It is super simple to make, requires only 5 ingredients, and takes less than 15-minutes! It has caramel-like consistency, contains no refined sugar, and can be stored in the fridge for the entire week.
My go-to snack in the fall is dipping green apples in this pumpkin butter. I’ll even eat a spoonful of the it for dessert.
The best part about this delicious fridge staple is that it’s the perfect recipe to use up any leftover pumpkin puree. But, I’d even open up an entire can of pumpkin puree for a double batch of this recipe.
Requires Minimal Ingredients
Assuming you have the pumpkin butter already made and stored in the fridge, this pumpkin toast requires only 4 ingredients.
- Pumpkin butter
- Italian bread (or any other favorite)
- Green apple
- Pecans
If you don’t have green apples, another variety will do, but you won’t get that sweet & tart combination that I particularly love in this recipe.
Pumpkin Butter Toast In Under 5 Minutes
Similar to most easy toast recipes, the key is figuring out the best combination and layers. Lucky for you, I did that part. So all you need to do is make some pumpkin butter and spend less than 5 minutes assembling this perfect pumpkin butter toast.
- Toast the bread while you pull out the pumpkin butter, thinly slice the green apples, and chop the pecans.
- Once the bread is toasted, spread a very generous layer of the pumpkin butter.
- Top with thinly sliced green apples and chopped pecans!
Repeat and make another, because trust me when I say one just isn’t enough!

These pumpkin butter toasts make the perfect breakfast, brunch, or appetizer.

Easy Pumpkin Butter Toast with Green Apples & Pecans
INGREDIENTS
- 1 cup Pumpkin Butter , see notes below
- 6 slices Italian bread , or any other favorite kind
- 2 green apples , thinly sliced
- pecans , chopped
INSTRUCTIONS
- Toast the slices of bread. In the meantime, thinly slice the green apples and chop the pecans.
- Spread a generous layer of prepared pumpkin butter over each slice of toasted bread.
- Top with a layer of green apples and chopped pecans.
- Cut the pumpkin butter toasts in half and enjoy!
